Ingredients

  • 1 large sweet potato, peeled & cubed
  • 1 cup cooked quinoa (~½ cup dry)
  • ½ small onion, finely diced
  • 2 eggs (or flax eggs)
  • ¼–⅓ cup flour (all-purpose or GF)
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper
  • Oil for frying

Optional Southern finish

  • Blackberry salsa or hot sauce + greens

Method

  1. Roast or boil sweet potato until soft; mash.
  2. Cook quinoa, cool. Mix with mashed sweet potato, onion, eggs, flour, and spices until it holds together.
  3. Form patties.
  4. Pan-fry in oil over medium heat 3–4 min per side until golden and crisp.

Finish + Service

Serve hot with greens, a simple slaw, or blackberry salsa for a bright Southern contrast.
