Ingredients
- 1 large sweet potato, peeled & cubed
- 1 cup cooked quinoa (~½ cup dry)
- ½ small onion, finely diced
- 2 eggs (or flax eggs)
- ¼–⅓ cup flour (all-purpose or GF)
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- Salt & pepper
- Oil for frying

- Blackberry salsa or hot sauce + greens
Method
- Roast or boil sweet potato until soft; mash.
- Cook quinoa, cool. Mix with mashed sweet potato, onion, eggs, flour, and spices until it holds together.
- Form patties.
- Pan-fry in oil over medium heat 3–4 min per side until golden and crisp.
Finish + Service
Serve hot with greens, a simple slaw, or blackberry salsa for a bright Southern contrast.
