Ingredients
Dough (fast option, 1 pizza)
- 300 g bread flour (about 2 1/2 cups)
- 7 g salt (about 1 1/4 tsp fine salt)
- 2 g instant yeast (about 3/4 tsp)
- 200 g warm water (about 3/4 cup + 1 tbsp)
- 10 g olive oil (2 tsp), optional but helps home-oven browning
Tomato base
- 200 g canned whole tomatoes, crushed by hand (or good crushed tomatoes)
- 1/2 tsp kosher salt (to taste)
- 1 tbsp olive oil
- Optional: 1 small garlic clove, finely grated
Topping
- 150–200 g fresh mozzarella (fior di latte), torn and patted dry
- Handful fresh basil leaves
- Extra-virgin olive oil, to finish
